Chipotle Dip
This was based on an online recipe that we changed up. It was an excellent New Years Eve appetizer with some corn chips
Ingredients:

2 Scallions

2-3 Small Canned Chilis in adobo sauce.

1/4 tsp. Adobo sauce reserved

1 cup low fat cream cheese

1/2 cup Sour Cream

1 tsp. Fresh Lemon Juice

Salt and Pepper to Taste

Directions:
Finely chop the scallions. Roughly chop chilis. Throw them in a food processor. Add the cream cheese and pulse lightly. Add the sour cream and pulse some more. add the lemon juice, pulse a few more time until smooth and mixed. Add salt and pepper. Chill until serving time. Serve with crudites, chips or crackers.
