Lime and Ginger Fruit Salad
I make this salad for every brunch I have a part of. I sometimes serve it with some vanilla yogurt mixed with vanilla extract and honey. You can add other fruits if you want.
Ingredients:
A pint of strawberries, sliced
2 kiwis, peeled and sliced
pineapple chunks, 2-3 cups
1 can mandarin orange slices
1 ripe mango, chopped
2 cups seedless grapes
star fruit, sliced if available

sauce:
1/2 cup water
1/2 cup honey
2 Tblsp sugar or fructose
1 2" slice of ginger root thinly sliced
pared peel and juice of 2 limes

Directions:
Mix all your fruit in an airtight container. In a small saucepan, heat your water with sweeteners and juice, ginger and peel. Simmer until slightly thickened. Strain and cool to room temperature. Pour over the fruit, and mix. If you can, let it sit in the fridge for a couple of hours or overnight. Serve chilled with the yogurt sauce that I mentioned before.
