Shrimp Linguini Al Napoli Rich's Variation
We had this wonderful dish in Naples two summers ago. Rich wanted to make a version of it at home in the states. This recipe comes pretty close.

Ingredients:

12 oz. Pasta

12 uncooked, cleaned large Shrimp

2 Tblsp Olive Oil

1 med. Onion, chopped

4 large Garlic Cloves, crushed

2-2 1/2 cups Plum Tomatoes

1/2 cup Shrimp or Fish Stalk

1/4 cup White Wine

1/2 cup fresh Basil, roughly chopped

salt and pepper to taste

Directions:
Cook pasta in a pot, and drain. Heat olive oil in heavy medium skillet over medium heat. Add onions, saute until translucent, about 3 minutes. Add garlic, saute 1 minute. Add shrimp, cook 2 minutes and remove. Set aside. Add tomatoes and saute 2-3 minutes. Add fish stock and wine, and reduce (about 4-6 minutes) Put shrimp back in and add basil. Mix in. Cook 2 minutes, add salt and pepper to taste. Toss and mix with cooked pasta.
